Abstract

Cabai merah keriting (Capsicum annum L.) merupakan salah satu rempah bumbu dan jenis buah dengan kandungan senyawa alkaloid utama kapsaisin dengan nama 8-metil-N-vanilil-trans-6-nonenamida. Senyawa ini didapatkan dengan cara ekstraksi maupun isolasi dan didapatkan oleoresin yang berupa cairan kecoklatan dan berminyak. Penelitian ini bertujuan untuk memperoleh kapsaisin dan menguji aktivitas antioksidannya. Teknik isolasi yang digunakan adalah soxhletasi, dengan menggunakan pelarut diklorometana. Didapatkan rendemen hasil ekstraksi sebanyak 10,9268 % dan pengujian antioksidan menggunakan metode DPPH (1,1-Difenil-2-Pikrilhidrazil) menunjukkan nilai IC50 36,21 ppm. Dengan demikian menunjukkan bahwa cabai merah keriting ini memiliki potensi antioksidan yang tinggi. Red chilli pepper (Capsicum annum L.) is one of spices and the type of vegetables which containing of capsaicin (8-methyl-N-vanilyl-trans-6-nonenamide) as main alkaloid compounds. This compound is obtained by extraction or isolation and produced oleoresin in the form of brownish and oily liquid. This study is aims to obtained capsaicin and test of antioxidant activity. The isolation technique used is extraction with soxhletation with dichloromethane as a solvent and testing antioxidant with DPPH (1,1-Diphenyl-2-Picrylhydrazyl) methode. In this study capsaicin obtained with rendemen is 10,9268 % and from antioxidant test the result is IC50 36,21 ppm which shows that red chilli pepper has high potential activity of antioxidant.
