Abstract

INDONESIA : Ayam broiler (Gallus Sp.) merupakan hewan ternak yang banyak diminati untuk dikonsumsi. Masyarakat mempunyai karakter kehati-hatian dalam memilih daging ayam dengan memperhatikan hasil sembelihannya. Pemenuhan kriteria penyembelihan hewan ternak yang diakui di Indonesia didasarkan kepada Fatwa MUI No. 12 Tahun 2009 tentang Standar Sertifikasi Penyembelihan Halal. Tujuan penelitian ini adalah untuk memeriksa dan menilai kriteria aspek fisik hasil sembelihan berdasarkan anatomi leher ayam broiler di pasar tradisional Kota Bandung. Penelitian ini merupakan penilitian deksriptif observatif dengan mengambil data kepasar tradisional sebanyak 48 sampel leher ayam broiler diperoleh dari lima area di Kota Bandung, wilayah timur, barat, selatan, utara, dan pusat kota. Sampel dari setiap wilayah berjumlah 9 buah dengan data kontrol 5 sampel leher ayam broiler dari rumah potong hewan yang sudah bersertifikasi halal. Parameter penelitian meliputi lebar dan kedalaman lubang sembelihan, serta pemenuhan syarat penyembelihan halal berdasarkan status terpotongnya organ esophagus, trakea, dan dua pembuluh darah (arteri carotid dan vena jugularis). Hasil penelitian menujukkan bahwa lebar dan kedalaman lubang sembelihan tidak sesuai terhadap pemenuhan 4 organ yang harus terpotong. Kualitas penyembelihan ayam broiler di 5 sampel wilayah pasar tradisional Kota Bandung belum memenuhi kriteria penyembelihan halal berdasarkan kriteria penilaian aspek fisik anatomi leher ayam broiler. ENGLISH : Broiler chickens (Gallus Sp.) are livestock that are in great demand for consumption. The community has the character of being careful in choosing chicken meat by paying attention to the results of the slaughter. Fulfillment of livestock slaughter criteria that is recognized in Indonesia is based on MUI Fatwa No. 12 of 2009 concerning Halal Slaughter Certification Standards. The purpose of this study was to examine and assess the criteria for the physical aspect of slaughter products based on the neck anatomy of broiler chickens in traditional markets in Bandung City. This research is a descriptive-observative research by taking data from traditional markets as many as 48 samples of broiler chicken necks obtained from five areas in the city of Bandung, east, west, south, north, and the city center. There were 9 samples from each region with control data of 5 samples of broiler chicken necks from halal-certified slaughterhouses. The research parameters included the width and depth of the slaughter hole, as well as the fulfillment of the requirements for halal slaughter based on the status of the cut off of the esophagus, trachea, and two blood vessels (carotid artery and jugular vein). The results of the study showed that the width and depth of the slaughter pit were not suitable for the fulfillment of the 4 organs that had to be cut. The quality of slaughtered broiler chickens in 5 samples of traditional market areas in Bandung City did not meet the criteria for halal slaughter based on the evaluation criteria for the physical aspect of the neck anatomy of broiler chickens.
