Abstract

INDONESIA: Industri tahu merupakan salah satu sektor penting dalam pemenuhan kebutuhan pangan masyarakat Indonesia. Dalam proses produksinya menghasilkan limbah cair dengan kandungan bahan organik yang tinggi, sehingga berpotensi mencemari lingkungan jika tidak dilakukan pengolahan secara benar. Penelitian ini bertujuan untuk menganalisis efektivitas ekoenzim berumur 3 bulan dan 6 bulan dalam menurunkan tingkat pencemaran limbah cair tahu dan peran sistem pengolahan anaerob dalam proses bioremediasi. Penelitian dilakukan secara eksperimental pada skala laboratorium menggunakan sistem pengolahan anaerobik selama 3 hari. Tiga perlakuan digunakan, yaitu tanpa ekoenzim (kontrol/EE-0), ekoenzim umur 3 bulan (EE-3), dan ekoenzim umur 6 bulan (EE-6), masing-masing dengan konsentrasi 20% (v/v). Parameter yang dianalisis meliputi pH, amonia total, BOD, COD, serta kadar minyak dan lemak. Data dianalisis menggunakan uji ANOVA satu arah (One Way ANOVA) dan uji efektivitas untuk mengidentifikasi perbedaan antar perlakuan. Hasil penelitian menunjukkan bahwa ekoenzim berumur 6 bulan lebih efektif dalam menurunkan pH dan kadar amonia dibandingkan ekoenzim berumur 3 bulan. Penambahan ekoenzim umur 3 maupun 6 bulan dengan konsentrasi 20%(v/v), belum efektif dalam menurunkan kadar BOD, COD, serta minyak/lemak. Proses anaerobik memberi dampak positif terhadap kualitas limbah, namun penggunaan ekoenzim pada konsentrasi tinggi perlu dikaji lebih lanjut. ENGLISH: The tofu industry is a vital sector in meeting the food needs of the Indonesian population. However, its production process generates wastewater with high organic content, which has the potential to pollute the environment if not properly treated. This study aimed to analyze the effectiveness of 3-month-old and 6-month-old eco-enzyme in reducing pollution levels in tofu wastewater and to the role of anaerobic treatment systems in the bioremediation process. The research was conducted experimentally on a laboratory scale using anaerobic treatment for 3 days. Three treatment groups were used: without eco-enzyme (control/EE-0), with 3-month-old eco-enzyme (EE-3), and with 6-month-old eco-enzyme (EE-6), each at a concentration of 20% (v/v). Parameters analyzed included pH, total ammonia, BOD, COD, and oil and grease content. Data were analyzed using one-way ANOVA and effectiveness testing to determine significant differences among treatments. The results showed that the 6-month-old eco-enzyme was more effective in reducing pH and ammonia levels compared to the 3-month-old variant. However, the addition of 3- and 6-month-old eco-enzymes at 20% (v/v) was not effective in reducing BOD, COD, or oil and grease levels. While the anaerobic process positively impacted wastewater quality, further investigation is needed to optimize eco-enzyme use, especially at high concentrations.
